Brie Salad

This salad (or one very similar, but I forgot to take a photo of mine so I googled this one) was served to my friend Mary Ruth and I when we were in Amsterdam for the European Patchwork and Quilting Festival in 2003. It is so simple but so delicious and it couldn't be easier! We've enjoyed it many times since then because she was smart enough to write down the ingredients in her little travel journal so we wouldn't forget. She's clever like that!

Ingredients needed:
salad greens
brie cheese
pine nuts (toasted)
honey

Simply toss the salad greens, slice the brie, sprinkle with pine nuts, and drizzle with honey. Be sure to serve with bread, so you can soak up every bit of cheese and honey that may be left on the plate.

**optional: strawberries or sliced pears or apples are yummy with this as well. I'm sure you could substitute almonds or pecans instead of the pine nuts if you prefer. But please don't substitute the brie if you are inviting me to lunch because it's my favorite! :)
