Banana Muffins

This recipe has been a family favorite for years and is the perfect solution to using bananas that are past their prime.

Preheat oven to 350 degrees, spray muffin tin with non stick spray

Ingredients

  • 2 large or 3 small very ripe bananas

  • 1/3 cup vegetable oil

  • 1/2 cup sugar

  • 2 eggs

  • 1 3/4 cup flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon baking powder

Mash the bananas in a large bowl. Add the oil, sugar and eggs. Mix will with a hand held mixer. Add remaining ingredients gradually, mixing well. Scoop dough into 12 large muffin tins. Bake 25-30 minutes or until a toothpick inserted comes out clean.

Note: mini muffins will take less time to cook and if you are making a loaf bake 40-45 minutes before testing.

Optional: add nuts or mini chocolate chips if desired.
