Taco Pie

Ingredients:

  • 2 TB olive oil

  • 1 yellow onion, chopped

  • 1 red or orange bell pepper, chopped

  • 2 TB garlic, minced

  • 1.5 lbs ground beef

  • salt and pepper

  • chili powder to taste

  • taco seasoning (1 packet)

  • 1 small bag frozen corn (3 cups)

  • 2 cups shredded cheese (Mexican blend)

  • 1 Jiffy corn bread box

  • 1 egg

  • 1/3 cup milk

Instructions:

  1. Preheat oven to 350 degrees and heat oil in large cast iron skillet.

  2. Add onion, bell pepper and garlic to skillet. Heat until tender, 5-6 minutes.

  3. Add ground beef, salt and pepper, chili powder, taco seasoning. Cook until beef is browned.

  4. Add half bag of corn and half of the shredded cheese. Mix.

  5. In a bowl, combine corn bread, egg and milk. Once mixed, stir in remaining corn.

  6. Spread the cornbread mixture over the skillet mixture and bake for 40-45 minutes until cornbread is cooked and starting to brown.

Serve warm. Add shredded lettuce, sour cream or any other favorite Mexican sides.
