Taco Pie
Ingredients:
2 TB olive oil
1 yellow onion, chopped
1 red or orange bell pepper, chopped
2 TB garlic, minced
1.5 lbs ground beef
salt and pepper
chili powder to taste
taco seasoning (1 packet)
1 small bag frozen corn (3 cups)
2 cups shredded cheese (Mexican blend)
1 Jiffy corn bread box
1 egg
1/3 cup milk
Instructions:
Preheat oven to 350 degrees and heat oil in large cast iron skillet.
Add onion, bell pepper and garlic to skillet. Heat until tender, 5-6 minutes.
Add ground beef, salt and pepper, chili powder, taco seasoning. Cook until beef is browned.
Add half bag of corn and half of the shredded cheese. Mix.
In a bowl, combine corn bread, egg and milk. Once mixed, stir in remaining corn.
Spread the cornbread mixture over the skillet mixture and bake for 40-45 minutes until cornbread is cooked and starting to brown.
Serve warm. Add shredded lettuce, sour cream or any other favorite Mexican sides.
