Pineapple Upside Down Skillet

Ingredients Needed:

  • Cast Iron Skillet

  • 6 TBS butter

  • 1 cup brown sugar

  • 1 can pineapple slices (and juice from this can)

  • 1 jar cherries

  • one yellow cake mix (plus ingredients listed on box)

  • 1 cup bourbon (we use JD)

Preheat oven to 350.

Prepare cake mix according to instructions on box, substituting bourbon for 1 cup of liquid. Add about 1/3-1/2 cup pineapple juice to mix as well.

Melt butter in skillet on stovetop. Add brown sugar once butter is melted, spread evenly. Arrange pineapple rings in skillet, adding a cherry to the center of each. Pour batter into skillet and spread evenly. Transfer skillet to the oven for about 30 minutes. Check with cake tester or toothpick until it comes out clean. Remove from oven and let cool. Place tray or serving platter on top of cooled skillet, turn cake onto serving tray and carefully remove skillet.
